Sushi Ginza Onodera (鮨 銀座 おのでら) is an exclusive sushi restaurant in Ginza. It serves a truly traditional Tokyo style sushi course. If you wish to experience a high-end Japanese restaurant and don’t mind about the budget, I can strongly recommend this place.
The successful sushi restaurant has launched several branches overseas: Hawaii, Paris, Shanghai, New York, and Los Angels. Onodera New York opened in May 2016 and has earned one star of Michelin Guide.
The dinner sushi course of “Omakase(おまかせ)” includes 10 dishes of appetizers, 15 pieces of sushi, miso soup, and desert. On the day, it started with a steamed egg custard in a cup, as called “chawan-mushi(茶碗蒸し)“, topped with sea urchin.
The restaurant makes alive seafood into fresh sashimi in front of customers.
Sweet shrimp (Botan ebi/ボタンエビ). The meat is really fresh and sweet.
Squid (Yariika/ヤリイカ). The sashimi is served with a cup of ground horse radish topped with dried bonito flakes, as called Katsuo-bushi(鰹節). Be careful, the horse radish has a stimulating flavor.
After a series of good appetizers, the chef finally started to serve many pieces of sushi.
In order to secure such high quality seafoods, “the most important thing is building a good relationship with wholesalers in Tsukiji Market”, says the chef. The closed community could provides ideal food stuffs once the restaurant builds a good relationship with it. The special stuffs are always hidden in the backyard of the market.
The dinner course shown above is served at JPY25,000 ++. The lunch course is rather reasonable, ranging from JPY5,000 to JPY13,000; JPY5,000 course includes an appetizer, 12 pieces of sushi, miso soup, and desert.
