Red Sea Bream Steamed in a Salt Crust

Hamaichi(濱壹) is an authentic Japanese restaurant in Hamamatsucho. The restaurant serves a fine Japanese kappo course and its specialty is the main dish, red sea bream roasted in a salt crust.

The dish, as called “Shiogama-yaki(塩釜焼き)” in Japanese, is a traditional Japanese cooking  style. Whole the body of a red sea bream is covered by a salt crust which is made from salt and egg whites. While it is roasted in an oven for 30-40 mins, the fish is well steamed inside the crust, so that the fish meat remains moist and tender. Finally, the crispy crust is broken by a hummer, and the well cooked fish comes out and is served to the guests. Your would be surprised with the texture of the fish meat.

The course menu ranges from ¥8,000 to ¥12,000, depending on the variety of the foodstuff. Each course consists of 7 or 8 authentic Japanese kappo dishes including the “Shiogama-yaki“.
